2000 Iowa Rabbit Festival

The Rabbit Festival is held in Iowa, Louisiana. Population around 2,740. Visitors expected, 30-40 THOUSAND! Amazing what a little town in South Louisiana can accomplish. I just want to know where all the "Portalets" are located!

If you've never tasted tame rabbit, you are in for a treat, give it a try. Rabbit is very much like chicken or hen. You can do almost anything to it that you do to most any kind of meat. It takes seasoning well, or herbs, or just a little salt, very versatile meat. You can sauce it, etouffee it, smoke it, make sausage or boudin with it, bake it, broil it.. Are you getting the idea it is a great meat to cook and eat? It also has another plus, it is super lean so you can be health conscience with it too!

As festivals go, I rank this one up there. The community is friendly and festival planners put a lot of thought into what people want - FOOD and ENTERTAINMENT! Both were very plentiful and diverse.

Oh Yea, and there was plenty of music, French, Zydeco, Country, Oldies, and Classics. AND, "lots" of folks to dance, from 2 to 92. "Manh sha a good time was passed by all!"
