Growing up in South Louisiana had many
advantages – no regrets – and more to do in one day than any
child had the energy to do. Simple things, like going to the abattoir
(slaughter house) on Saturday morning with my Dad could
be a great adventure. In those days, I don’t think I really knew
what went on at the abattoir, it was just fun to go and see all
the different animals, never dreaming we’d be eating one of
them.

This is the front of the Abattoir (slaughter
house), it is like taking a step back in time. It meets all the
requirements for a business of its kind, but it has not lost any
of its rustic appeal.
Note: Clifton died Friday January 19, 2001
after a lengthy battle with cancer. When you look at these
pictures, you will see a robust man, and this is the way we will
all remember him.
Clifton and Shirley Dupuis bought the abattoir in the early 60’s. Clifton said "the
abattoir has been
there for 50 – 60 years and has always been a small operation, a
"mom & pop" business. He and Shirley have been
running the business the same way, as a small "mom and
pop" operation, keeping things simple.

Cher, I want you to know this is one big COLD refrigerator,
just ask Sue, and it holds a bunch of good meat from time to time. |
