Shrimp & Egg Gumbo- Pg. 3

Step Four:
Using a metal ladle, submerse it into gumbo and let it get hot. It would be great if you had a helper about now. Let a small amount of gumbo into the ladle and break an egg into ladle. 

Lower ladle gently into gumbo without dropping egg into gumbo. You want egg to start congealing so that when you do slide it into the gumbo it stays fairly whole.

Hold like this for about a minute and a half then slowly let egg slip out of ladle into gumbo. Now do the next 5 eggs the same way. Let cook for about another 30 minutes on a low fire.
