| If you have a black iron skillet, use it, if you don’t, any heavy pot will do. I’ve never made roux in a stainless steel pot, but hey, there are a lot of things I haven’t done yet! Let me know if you make a roux in a stainless steel pot; and how it worked.
1 Cup Oil
1 Cup Flour

STEP ONE:
Get the oil hot, but not smoking, add flour, turn fire down to a medium fire and stir, stir, stir! Don’t stop stirring.
