Meatless Rice Dressing

This is a recipe from one of my First Cousins. It has been a life saver many times when I needed a side dish for Bar-B-Que. It is easy and quick. I use my electric rice cooker, plug it in and forget about it.

1 stick Margarine
1 lg. Onion (chopped)
1 lg. Bell Pepper (chopped)
1 ˝ c. Celery (chopped)
1 ˝ c. Raw Rice (long grain)
2 cans Beef Consommé
Tony Chachere's Seasoning (to taste)

Put all the ingredients in the rice cooker, stir it up, put on the lid and turn on. After about 10 minutes remove the lid, stir and put the lid back on. Let sit for half an hour after the timer goes off. 

Be careful adding seasoning, the consommé has salt in it and you could easily over salt. 

Oven method: Melt margarine before adding. Mix all ingredients as above. Bake in a 3 quart casserole, covered, in a 350° oven for 
45 - 60 minutes or until rice is cooked.
