Every so often Mike (my husband) & I decide to eat healthy, and loose weight. At these times I try to take fat and calories out of dishes we like, this is one of those.
1 lb. Lean Ground Beef or Turkey
1 lb. Turkey Sausage (cut in small pieces)
4 T. Oil
Tony Chachere's Seasoning
2 med. Onions (chopped)
4 ribs Celery (chopped)
1 med. Bell Pepper (chopped)
2 Eggplants (chopped in small pieces)
2 cans Chicken Broth
8 c. Cooked Rice (more or less)
I use a medium oval Magnalite Roaster for almost all of my rice dressings. Put the meat in the roaster with the oil and "fry down" on a medium - high fire stirring often. Season with Tony's TO YOUR TASTE.
It will make a brown crusty bottom, add a little water to keep from scorching. Add next 4 ingredients and sauté until wilted. Add chicken broth and simmer for 30 minutes on medium-low heat. Sometimes I use Kitchen Bouquet to darken the mixture because I don't like a pale looking dressing or gravy.
Add half of the rice now and stir to mix, add rice until you have a good mix of dressing and rice. This is so hard to give directions because sometimes (for whatever reasons be) I have more liquid than others. NOTE: Please use whatever seasoning you like. I am a Tony Chachere's
Seasoning fan because it has the taste my family and I like. Use Tabasco, Red Pepper or any seasoning with heat, just don't over do, you just want to enhance, not smother the flavor of the food.
