CAJUN SCALLOPED POTATOES

4 lbs. Potatoes (sliced about 1/4th inch thick)
2 c. Onion (chopped)
1 stick margarine (cut in about 12 pats)
2 c. Carnation Cream
4 T. Spicy Brown Mustard
1 heaping T. Tony Chachere's Seasoning
6 oz. Mozzarella Cheese (grated)
6 oz. Cheddar Cheese (grated)

In a 3 quart baking dish, place half the potatoes, half the onions and 6 pats of margarine then repeat the layer.

In a sauce pan, put the cream, mustard, and seasoning, Heat till hot but not boiling. Pour this mixture over the potatoes. Bake at 350° for 45 minutes.

Remove from oven and sprinkle the cheese over the potatoes and bake for another 15 to 20 minutes or until cheese is bubbly but not scorching. Stick a fork in the potatoes and if they are tender, it is done, if not, bake until tender.

Serves 8 easily. This recipe halves easily, and for that matter, it doubles easily also!
