I am giving the recipe for "store bought" frozen limas, but you can do the same thing with fresh limas if you are lucky enough to have some.
1 lb. Fresh or Frozen Baby Lima Beans
4 slices Bacon (Seasoned Bacon if you can find it)
1/4 tsp. Red Pepper (omit if using seasoned bacon)
1/2 tsp. Salt (omit if using seasoned bacon)
1 med. Onion (chopped fine)
1 tsp. Sugar
Salt and Black Pepper to taste
2 T. Parsley (minced)
Cut bacon into small pieces and put in a 3 qt. Saucepan along with the red pepper and salt. Cook on a medium fire until the bottom of the pot has oil in it, then add onions and cook until they are wilted.
Add the lima beans and enough water to cover the beans and simmer over a medium low fire until the beans are tender. Add the sugar. Add salt and black pepper if needed. Taste the beans and judge whether they need seasoning or not. Add the parsley and let cook for about 5 minutes. Serve. |
