Seafood Stuffing

This is the base for many dishes including, Stuffed Shrimp, Stuffed Crab, and Stuffed Broiled Catfish. How about just buttering a casserole dish and adding this stuffing and putting buttered cracker crumbs on top. This is a basic seafood stuffing sauce and can be integrated in many ways with many different foods. A seafood stuffed eggplant boat sounds interesting, now make your own seafood music to this dish.

Seasoning Mixture:
1 T. Garlic Powder
1 tsp. Red Pepper
1 tsp. White Pepper
1 T. Sweet Basil
3 tsp. Salt
2 T. Garlic (minced)
2 tsp. Accent
2 tsp. Tabasco
1 T. Worcestershire Sauce
1/4 tsp. Oregano
1/4 tsp. Curry powder
1/4 tsp. Thyme

Mix all ingredients together and set aside.

12 T. Butter
3/4 c. Onion (finely chopped)
1/3 c. Bell Pepper (finely chopped)
1/4 c. Celery (finely chopped)
1 lb. Crabmeat
1/4 c. Pimento (finely minced)
1 c. White Bread Crumbs

Melt butter in a skillet and wilt onions, bell pepper and celery, about 5 minutes on a medium heat.
