I was telling Virginia about a request I had gotten from a visitor
to my cooking site for a really moist meatloaf and she gave me
this one. It is her recipe for meatloaf. It is simple and
delicious.
2 lb. Lean Ground Beef
2 Eggs
1/2 c. Bread Crumbs
1/2 c. Ketchup
Salt and Pepper to Taste
Mix all ingredients together using a meat fork (one of those 2
tined forks). This keeps the meat from getting tough by too much
handling. After you have mixed all the ingredients really well,
using hands form into one or two meatloaves.
You can either bake them in a baking pan or in loaf pans.
Bake at 325° until done. Use a meat thermometer to check for
doneness, it is the only way not to over cook any meat, thus
causing it to be dry. |
