SAUSAGE BREAKFAST CASSEROLE
This is one of those easy recipes that is so simple and requires so few ingredients, you marvel at the wonderful flavors that come form it.
1 lb. Smoked Sausage (use Jimmy Dean Sausage, if you
can't get smoked cajun sausage)
8 Eggs
1 c. Milk
6 oz. Mild Cheddar Cheese (grated)
6 oz. Pepper Jack Cheese (grated)
1 lg. Can Grands Country Style Biscuits
Cook sausage in a skillet with the lid on, on a very low fire (you want sausage to stay moist). When done, remove sausage from pot and allow to cool. When cool, process in food processor to make it like
coarse ground meat. Set aside.
Mix eggs and milk together and beat well. Stir in cheese.
Split each biscuit in half so it will give you 2 biscuits. Lay each biscuit in a greased 9"x13" glass baking dish. Bake the biscuits for about 10 minutes in a 350° oven.
Sprinkle the sausage over the biscuits. Pour the egg mixture over the sausage and bake at 350° for 30 to 40 minutes. |
