REDUCED CALORIE AMBROSIA SALAD

I told you I'd be doing recipes with my honey in mind, and this is one of them. It is a pared down version, with less sugar. If you use coconut (the bagged kind) you will have to take that into consideration. I've had this recipe for a long time, I think I got it from one of my cousins that her husband is diabetic. It has a lot of flavor, so it makes you feel like you are not being deprived.

2 pkg. Dream Whip
2 tsp. Vanilla
4 packets Equal
1 lg. Sugar Free Orange Jell-O
1 lg. Can Mandarin Oranges or Fresh (DRAINED)
20 oz. Can Pineapple Chunks (in its own juice) (DRAINED)
4 c. Miniature Marshmallows

1 c. Coconut (shredded, from a bag - Optional)
1 Banana (sliced & Optional)
¾ c. Seedless Grapes (Optional)

Mix the Dream Whip according to package directions, using water instead of milk. Add the 2 teaspoons of vanilla and Equal.

Add the jell-o and mix well. Fold in the oranges, pineapple and marshmallows. Refrigerate.

Note: Using fresh oranges reduces grams of sugar even more.

Add the coconut, banana and grapes if you are using this recipe as a diet aid and not in a diabetic diet.

NOTE:
To all diabetics, you will have to make a decision if this is an acceptable recipe for you. It may not be, discuss it with your dietician.
