PEA SALAD

This is one of my favorite salads. I can make a meal off just this salad. I don't make it often because I am the only one that likes it. Mike and the kids turn their noses up at it.

1 can Sweet Green Peas-drained 
(I also use frozen Peas, about 2 c. defrosted and drained)
1 sm. Onion (finely chopped)
2 ribs Celery (finely chopped)
3 Boiled Eggs (finely chopped)
4 oz. American Cheese (coarsely grated)
Cajun seasoning OR salt, red pepper and black pepper
Mayonnaise
1/2 c. Green Onion (finely chopped)
1/2 c. Parsley (finely chopped)

Mix first five (5) ingredients together, season according to your taste. Add mayonnaise until the ingredients start sticking together. I like a lot of mayonnaise in my salad, taste at this point to see if you need to add more seasoning because adding the mayonnaise dilutes the seasoning a little.

Garnish the top with green onion and parsley. Refrigerate.
