VANILLA CUSTARD ICE CREAM

My Mom taught me how to make the best ice cream, bar none. This is a cooked custard. I have never liked a raw egg ice cream, I just don't like the taste of raw eggs.
4 tall cans Evaporated Milk
2 cans Water
2 c. Sugar
6 T. Corn starch
1 can Condensed Milk
12 Eggs (well beaten)
3 T. Vanilla
In a large pot, put in the first 2 ingredients and heat (NOT to boiling).
Mix sugar and corn starch together in a large bowl. Add condensed
milk, eggs and vanilla and beat with an electric mixer for at least 5 minutes. Take some of the hot milk and pour into egg mixture while beating at a low speed.
Now add the egg mixture to the pot of milk while stirring the mixture constantly so the eggs won't cook too fast.
Cook mixture on a medium heat till it starts to thicken, stirring constantly. Allow to cool al little before putting in the ice cream maker.
I use a Stone Mountain Electric Ice Cream Maker. It is heavy duty and does a great job, quickly and firmly.
NOTE: This is a basic vanilla ice cream with a lot of intense flavor and is great as is, but you can add fruit for fruit flavored ice cream like cherries, strawberries, banana or chocolate syrup for chocolate ice cream or flavorings. |
