It is time for summer to come to an end, we don't need me experimenting in the kitchen with recipes, especially nice cold recipes. I've eaten this similar flavored ice cream in a Baskin Robins Ice Cream Parlor before and it is definitely up there with "one of my favorites".
2 c. White Raisons
½ c. Rum
2 pkg. Instant French Vanilla Pudding Mix
2 c. Sugar
4 - 12 oz. Cans Evaporated Milk
2 tsp. Rum Extract
Mix raisons and rum together and microwave for 5 minutes and allow to sit for 20 minutes or so.
Mix pudding, sugar, and 1 can of milk and whisk to dissolve pudding and sugar. Add other 3 cans milk and rum extract and whisk until all is well incorporated. Add raisons and enough milk to make 1 gallon. Refrigerate over night or at least until the mixture is cold.
Put in an ice cream freezer and follow manufacturer directions. This absolutely delicious. |
