Nedia Woods
Aunt Nedia is one of my Dad's sisters (he is one of 13 brothers and sisters). She is one awesome cook, and this is the only recipe I have from her so I want to share it with you. Maybe I can get a few more form her daughter Martha. I hope she has had the good sense to write them down or make them often enough to remember how some were done.
1 c. Shortening
2 c. Sugar
4 Eggs (beaten)
1½ c. Buttermilk
1 tsp. Soda
3 T. Grated Orange Peel
4 c. Flour
1 c. Dates (chopped) (dredge in a little flour)
1½ c. Pecans (chopped fine) (dredge in a little flour)
Cream shortening and sugar, add eggs and continue to beat.
Mix soda, flour and orange peel together and add alternately with the buttermilk to the egg mixture until all is used, beating until well incorporated.
By hand stir in dates and pecans. Pour into a bundt cake pan or
large tube pan.
Bake at 325° for 1 ½ hours. Test with broom straw for doneness.
When cake is done, remove from oven and pour glaze over cake while
still in the pan. Allow to cool IN PAN. Remove from pan onto
cake plate.
GLAZE:
1 c. Orange Juice
2 c. Sugar
3 T. Grated Orange Peel
Mix together and pour on hot cake. |
