I had this dessert a couple of years back at a bar-b-que we went to at a friends home. I thought it was absolutely delicious, as did everyone else. It also appeared to be a tedious recipe, NOT, it is very simple, and depending on the dish you prepare it in, it can be very elegant or ready for a pot luck in a disposable container.
Topping:
1 c. sugar
1/3 c. Hershey's Cocoa
1/4 c. Milk
1 stick Margarine
1 tsp. Vanilla
Combine all ingredients in a sauce pan and cook on a medium fire, when it boils, time it for 5 minutes then turn heat off and allow to cool for a short while (do not let cool too much).
Filling:
2 boxes Instant Cheesecake Pudding Mix
3 c. Carnation Milk
8 oz. Frozen Cool Whip (defrosted)
Graham Crackers
Mix pudding and milk until thoroughly incorporated. Add Cool Whip and stir until mixed with the pudding.
Put a layer of Graham Crackers in the dish you have selected. Cover the bottom as well as you can, Pour 1/2 the pudding mixture over the Graham Crackers. Put another layer of crackers over the pudding and then pour the rest of the pudding mixture over that layer of crackers. Now put your final layer of crackers over the pudding and pour your fudge sauce over the crackers. Refrigerate until ready to serve. It is best if made a day ahead, the flavors seem to get more pronounced if allowed to sit for a bit. |
