SUGAR-FREE BUTTERED PECAN ICE CREAM

My "Honey's" favorite ice cream is vanilla, but he also loves pecans. I make this recipe both ways, depending on his mood on the day I make it. This is a rich tasting ice cream, you will never miss the sugar that is not in it.
1 c. Pecans (chopped)
2 T. Butter
2 - 1.5 oz. pkgs. Sugar-Free Vanilla Instant Pudding Mix
1 1/2 c. Equal Spoonful
48 oz. Fat Free Instant Powdered Milk (directions below)
2 tsp. Butter Extract
Sauté pecans and butter in a sauce pan, lightly toasting, DO NOT scorch. Allow to cool.
Mix pudding, Equal, and 1/2 of the milk and whisk to dissolve pudding and sugar. Add rest of milk and butter extract and whisk until all is well incorporated. Add cooled pecans and enough extra milk to make 1 gallon. Refrigerate over night or at least until the mixture is cold.
Put in an ice cream freezer and follow manufacturer directions. This is absolutely delicious
Non Fat Dry Milk Mix:
4 c. Dry Milk Mix
6 c. Water
Mix ingredients together.
The instructions on the box said to use 1/3 cup dry milk mix per cup of water, but to get a richer flavor, I use 2/3 cup of mix per cup of water. |
