SUGAR-FREE BLUEBERRY CRUNCH

I'm really getting into this sugar free thing. When you can make something sugar free and not miss the sugar, you are on to something healthier. I made this a couple of weeks back for a group we meet with once a month, and if I had not told them it was sugar free, they would never have guessed.

4 c. Fresh or Frozen Blueberries(I also use peaches & apples)
3 T. Lemon Juice
5.5 oz. Can Apple Juice
1 1/2 c. Equal Spoonful
1 T. Cinnamon
3 T. (heaping) Cornstarch
Topping:
¼ c. Flour
1/2 c. Equal Spoonful
1 tsp. Ground Cinnamon
1/2 tsp. Ground Nutmeg
1/2 tsp. Ground Allspice
4 T. Margarine (cold & cut in pieces)
1/2 c. Quick-Cooking Oats

Put berries (or other fruit) in a 9" square, sprayed with Oil and sprinkle lemon juice over them, pour on apple juice.

Mix Equal, cinnamon, and cornstarch together and spread over fruit.

Combine flour, Equal, and spices in small bowl; cut in margarine with pastry blender until mixture resembles coarse crumbs. Stir in oats. Sprinkle this over fruit/Equal mixture.
Bake at 350° for 45 to 55 minutes

NOTE:
When I use apples or peaches, I use 1/4 c. Quick Cooking Oats and 1/4 c. unsweetened flaked coconut instead of 1/2 c. Oats.
Serve the sugar-free ice cream over the hot Blueberry Crunch and you won't ever think you are eating sugar-free.
