This is another one of those recipes from the past, same box. These are two old and dear friends. We have shared recipes over the years, laughed and cried together and raised our kids in the same neighborhood. This is an unusual cake, and well worth the ingredients and time.
1 c. Coke
1/2 lb. Margarine
2 T. Cocoa (powdered)
2 c. Flour
2 c. Sugar
1/2 c. Buttermilk
2 eggs (slightly beaten)
1 tsp. Each Soda & Vanilla
1 1/2 c. Miniature Marshmallows
Icing
Bring coke, cocoa and margarine to a boil. Mix flour and sugar together in a mixing bowl and pour coke mixture over flour while running mixer at a low speed. Add the rest of the ingredients EXCEPT for the marshmallows and mix really well until all ingredients are will mixed. Stir in the marshmallows.
Pour into a 9"x13"x2" pan and bake at 350° for 45 minutes. As soon as cake comes out of oven pour icing over it and let cool in pan.
ICING:
1/4 lb. Margarine
2 T. Cocoa
6 T. Coke
1 lb. Powdered Sugar
1 c. Pecans (finely chopped)
Bring butter, cocoa, & coke to boil. Mix sugar & pecans in bowl and pour in coke mixture, mix well, pour over cake. |
