BEIGNETS

2 c. Flour
1 T. Sugar
1 tsp. Baking Powder
1 tsp. Soda
1 c. Milk
1 Egg (slightly beaten)
Powdered Sugar

Sift dry ingredients into a bowl. Add milk and egg and beat well. Drop by a tablespoon into hot oil (about 375°). Fry until golden. Remove with slotted spoon and drain on a few layers of paper towel.

Can be served sprinkled with powdered sugar or syrup and butter, the latter being more southern Cajun. This was a Sunday night supper at our home. A pot of sausage was cooked to go along with it. We liked a salty - sweet meal.
