SWEET POTATO BREAD

This is a wonderful recipe. The aroma when it bakes starts your mouth watering. When it comes out of the oven, you salivate because the aroma almost has a "taste" to it. JoAnn, Louis' wife was a warm, generous Cajun lady, ready to share her delicious recipes with me. I hope to visit her kitchen one of these days and have her do a "How You Do Dat" segment for us.

3 Eggs (lightly beaten)
2 1/2 c. Sugar
1 tsp. Vanilla
1 tsp. Each - Cinnamon, Nutmeg, & 2 tsp. Clove
1 1/2 tsp. Baking Powder
1 1/2 c. Flour
1 c. Pecans (chopped)
8 c. Sweet Potato (grated)

Mix sugar, vanilla and eggs together and beat well. Mix spices, baking powder and flour together and beat into egg mixture. Stir in the pecan and sweet potatoes. This will take a little work as the only moisture is the egg, but don't panic and add any other liquid, just be patient and mix it together.

Pour into a greased and floured 11"X13" baking pan. Bake at 350° for 45 - 60 minutes. Cake will be moist, so don't be real concerned that it is not baked.
