This is a recipe my husband urged me to develop. We had a pear tree in our back yard, and he wanted pear butter. He eats bread, butter and apple butter for breakfast EVERY morning "boring". Well anyhow, he said he wouldn't be able to tell the difference between Pear Butter and Apple Butter. He also had another request, don't use sugar, use a substitute instead. Well this is what we came up with and it is pretty good.
4 c. Pear or Apple (peeled, cored and chunked)
2 - 6 oz. Cans Apple Juice
2 tsp. Ground Allspice
2 tsp. Cinnamon
½ tsp. Ground Cloves
10 pkg. Equal
Put fruit in a medium sauce pan and add the juice and spices.
Cook until fruit are soft and can be mashed easily. Cook until the mixture has thickened.
Remove from fire and add the Equal and put in jars, cap with lids and put them in a water bath for 15 -20 minutes.
NOTE: This fruit butter is around 11 calories per tablespoon. It doesn't make any difference which you use, pear or apple they taste the same after they are canned. |
