CHICKEN SALAD
WEDDING SANDWICHES

Ok, so maybe I have gone too far now, I can't help myself. I have been digging in some old notebooks, binders, files and old cookbooks and finding all these recipes that I haven't looked at in years. This is the recipe my Mom and her friend used to make the sandwiches for my honey's Wedding and me. I don't know how accurate this recipe is, it is just nostalgia kicking in right now.
7 lg. Hens
36 loaves of bread
1 gal. Pickles (ground)
4 gal. Salad Dressing
7 - 8 stalks Celery (ground)
Season and roast or steam hens. Cool. Pick skin and meat off bones and grind in meat grinder.
I can't even begin to imagine how they mixed all these ingredients. If I had to guess, I'd say they did it in batches that fit the largest container they could get their greasy little hands on.
According to their calculations, they made 455 sandwiches. 1 hen made approximately 66 sandwiches. And the last tid bit of information on the card I found this recipe on, they had approximately 55 pounds of "hen meat". That doesn't sound right, "55 pounds of meat" but it has been 34 years and everyone's memory has a different memory and all had different numbers, who knows!
Now guys, I don't remember much about the reception, but I'm told there wasn't any food left, so I guess that tells you something about the punch and sandwiches at least. So if you have a lot of chicken salad sandwiches to make, you might want to give this recipe a try. |
