What is Cajun cooking and where did it come from?


The term ‘ Cajun’ refers mainly to the early French settlers who intermarried/cohabited/lived with the Creole Indians, mostly in Louisiana and western Florida. Cajun cooking includes the use of many spices, and hot sauces. Justin Wilson (now deceased) was a
fantastic ‘cajun’ chef/cook; he oftentimes told jokes and stories while he prepared recipes. There are many, succulent dishes prepared in this fashion.

I took a 2 week break from the web and vlogging but I’m back and ready to start uploading videos again. This weekend in Hampton Roads, Va. we are rocking with festivals and I’m going to try my best to attend as many as possible to record the fun.

Here’s what’s happening:
The 43rd annual Hampton Jazz Festival will take place June 25-27, 2010
at the Hampton Coliseum.

Friday, June 25, 7:30 PM

Old creole chef – had a PBS show?

Anyone know the name of the creole chef who (I believe) had a show on PBS. Has a very thick accent and would say things like ‘That’s one cup of wine… That’s two cups of wine…’ as he dumped wine in whatever he was cooking. If I recall correctly he’s always sit down at a table and ate whatever he made that day at the end of his show.

Justin Wilson. That’s good, I guarontee!

Born & raised Cajun-don’t cook anything else. One of the best cuisines ever! Justin Wilson has good cookbooks, but It’s All Good cookbooks are the best to have-all locals donate receipes. it’s the bomb!

A name please, we’re going crazy here, What was the name of the cajun cook with a humor for an extra SIP of wine throughout his recipes, was it Justin ?????.A entertaining old fellow…Just one of those tongue tippers.More fun to watch after Graham Kerr dried-up.

Yes it was Justin Wilson .We watched him every Sunday afternoon before dinner He was great, we really miss him and still talk about him It was not so much his recipes ,but his sense of humor, his stories, and his wit that we enjoyed so much, it was like inviting a friend and neighbor into our home and no matter what kind of concoction he came up with, he always made it seem like it was the most delicious dish in the world. I wish they would put on his show back on every Sunday. he was an excellent entertainer and storyteller No one can replace Justin Wilson

We had a Cajun/Creole Pot Luck, Here is some video footage of the making of the Gumbo. That’s what I’m talk’n about rite there. As you will see we used the fast and furious method of making the roux, I also dressed up a little and used my best Justin Wilson impersonation.
