Put down anything to get 10 points
anyting on Chicken or anything

Jambalaya!

2 lbs Italian/green onion sausage (crumbled)–
Saute in large pan.
3 packs frozen chopped seasoning (bellpepper, onion, celery)–
Brown the above together and skim off any excess grease.
Season to taste with garlic powder, "Tony Chacherie" or other full-bodied seasoning, and Worcestershire sauce.
Add 1-2 cans Ro-Tel Tomatoes.
Add chicken broth or stock to cover (about 3" above seasoning/meat mixture).
Cover and simmer a few minutes.
Add 1-3 cups of any meat or shell fish as desired….shrimp, crawfish, turkey, chicken, etc.
Cover and simmer some more!
Add 2-4 cups of rice (Uncle Ben’s works great!), depending on how large your pot is.
Cover and cook on "hi" for 15 minutes or so; then turn down and cool, stirring occasionally until tender!


Does anyone have a Cajun Turkey Recipe for a turkey that will be cooked in an oven, rather than in a deep fat?

I just want to cook a huge turkey (22 lbs.) in an oven rather than with a fryer and would like to have a great Cajun Turkey recipe.

You should double this recipe, Tony’s creole seasoning is available in most grocery stores.

Cajun Style Turkey

12 – 14 lb turkey

Season inside and out generously with 2 – 3 Tbsp Tony’s seasoning

Place 1 cup *veg mix and 2 sticks butter inside bird Place bird in roasting/baking pan
(*1 cup veg mix: In blender: 1 onion 1/2 green bell pepper 2 sticks celery 1 clove garlic)

Cover the turkey breast with bacon strips and a paste of butter & flour.
*1 cup chicken stock (1/2 inside bird other half in bottom of pan)
Cover or tent and bake in 300 degree pre-heated oven around 4 hrs, steaming until tender. Remove cover, pour off pan juices, set oven to 500 degrees and brown bird for about 8 – 10 minutes.

*"almost" equal amounts (just a little more of the butter). Melt/heat butter then the flour is stirred in to make a paste that is not "too dry"

Cajun Turducken Assembly in Atlanta Meat Market – Part 3 of 4 – Putting it Together

Cajun Turduckens are a house specialty at the Douglasville Retail Meat and Smokehouse, just outside Atlanta. Turduckens consist of a mostly boneless turkey, stuffed with a boneless chicken and often duck breast (since whole ducks are usually too long for a standard sized turkey) with some variety stuffing between the meat layers.

In this third video in our four part series, owner David Widaski assembles a Turducken with Cajun crawfish cornbread stuffing for a satisfied client. The turduckens made at the Smokehouse are always fresh, as they take as much as 24 hours to thaw if you get a frozen one, which can be a hassle for clients.

The other advantage of having your Turducken made at the Smokehouse is that you choose the amount of spice and heat you want. Simple herb stuffings are available for a lighter palate.

If you have never tried a Turducken, give the Smokehouse a call at 770-577-2374 to start a new tradition in your home. If you love Cajun food, it doesn’t get much better than this. Turduckens can be special ordered all year long (thought most are sold for Thanksgiving and Christmas), but do require a 2-day lead time in most cases.
