what are some wedding menu ideas for a buffet and action stations?

Me and my fiance love all types of food especially, seafood, spanish, afro latin cuisine, french creole, italian and traditional mexican and of course good old southern cooking !! please give me some suggestions on a menu for our 200+ wedding guest any ideas for action stations , and buffet items. thanks !

Depends on what you want to spend, but people usually expect a beef carving station, and maybe ham or turkey.
I think it’s boring but people do like it.
A pasta bar can have 3 types of pasta and chefs can add sauces or pasta can be premade and guests help themselves. The fewer the chefs the lower the cost of course.
After that a sushi station ( you’ll need 3 chef’s just for that for 200 guests) is popular, or a Yakitori grill,as well as a Taco bar. Try Beef Chix and Fish or Shrimp Tacos. Try a raw seafood station with piles of cooked Kiwi mussels (Greengage) , Oysters (preopened) and Shrimp.
It it’s outside just a big grill with BBQ might be enough if there is variety like sausage, beef, chix , ribs etc.
Or a traditional NE clambake. You need a caterer who knows how to do this but you get seafood, chicken, hot dogs, chowder, and corn. It’s different fun and everyone gets to wear a bib.

New ideas for cooking chicken?

I love chicken and eat it quite often. I use shake and bake or creole seasoning and just bake it usually, Ive tried parmesean chicken with speghetti, chicken n dumplins, chicken cassarole, and made bbq with it.. anyone have any other ideas? I need some new ideas :)

Chicken Tacos
Chicken, cooked and shredded (I usually use a premade rotisserie from the grocery store)
Regular sized jar of salsa
1 can of black beans, rinsed
about 1 tsp of cilantro, chopped
about 1 tsp of cumin
salt, pepper and lime juice to taste
Simmer all ingredients together for about 20 minutes
Serve in taco shells with favorite toppings

Chicken Cordon Bleu – check http://www.allrecipes.com , I don’t have my recipe on hand

Chicken pot pie
Chicken
1 – 2 cans of veg all and chicken gravy
shredded cheese (optional)
garlic salt and pepper to taste
Pillsbury pie crust
Mix all ingredients, except pie crust. Follow the pie crust instructions.

Chicken Pizza
Chicken
Garlic alfredo sauce
Other favorite toppings
Pillsbury frozen pizza crust
Follow pillsbury directions, spread sauce, add toppings and bake. Quick, easy and delicious!

What food is famous in the area where you live?

I lived in Louisiana, and they have the best seafood ever, and cajun cooking. Now I live in Washington, and seafood is really big here too. Salmon the most.
Oh, I LOVE Carne Asada and Fish Tacos. I used to live in San Diego, and that’s the only place that has those (made right). And orange juliuses

seafood !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
