what are some wedding menu ideas for a buffet and action stations?

Me and my fiance love all types of food especially, seafood,spanish, afro latin cuisine, french creole, italian and traditional mexican and of course good old southern cooking !! please give me some suggestions on a menu for our 200+ wedding guest any ideas for action stations , and buffet items. thanks !

Depends on what you want to spend, but people usually expect a beef carving station, and maybe ham or turkey.
I think it’s boring but people do like it.
A pasta bar can have 3 types of pasta and chefs can add sauces or pasta can be premade and guests help themselves. The fewer the chefs the lower the cost of course.
After that a sushi station ( you’ll need 3 chef’s just for that for 200 guests) is popular, or a Yakitori grill,as well as a Taco bar. Try Beef Chix and Fish or Shrimp Tacos. Try a raw seafood station with piles of cooked Kiwi mussels (Greengage) , Oysters (preopened) and Shrimp.
It it’s outside just a big grill with BBQ might be enough if there is variety like sausage, beef, chix , ribs etc.
Or a traditional NE clambake. You need a caterer who knows how to do this but you get seafood, chicken, hot dogs, chowder, and corn. It’s different fun and everyone gets to wear a bib.


Where can I get crawfish near Akron, Ohio?

I love seafood, Cajun, southern cooking, and I recently saw a movie with a giant plate of crawfish. I hear it’s seasonal, but I’m curious if there’s a restaurant around these parts that I could try crawfish. (Not breaded and fried like Popeye’s) If not, we go to Hilton Head once a year, is there a place there?

Have it shipped-in from either coast. Or, the Gulf of Mexico.

What is your local cuisine? The style of cooking indigenous to your area where you are living…?

I am blessed and fortunate enough to live on the Mississippi Gulf Coast and so creole/cajun Southern style cookery is what we do here…we are 90 miles from New Orleans and a lot of our restaurant owners were trained in New Orleans…

Used to be just southern fried and cooked to death. Now we have the local Mexican flavor, not Tex-Mex. Just about everyone here grows a garden every spring. There is nothing to compare with a juicy homegrown, vine ripened tomato. We eat lots of purple hull peas, okra, potatoes, fish, watermelon, corn on the cob, squash and of course it is all cooked to death. I guess that’s just southern cooking.
Dirty rice is one of my favorites.
