Cajun Grilled Shrimp with Cheese Grits & a Cajun Omelet at Chicory & Chives Tulsa, OK

http://www.tulsafoodblog.com – Check out this delicious lunch special from Chicory & Chives. This is Cajun grilled shrimp with cheese grits. The shrimp is spicy and tender and the cheese grits are definitely more sophisticated than they seem. Loaded with flavor (and bacon), they are so light and fluffy. The sausage was an unexpected extra and was not greasy but delicious and lean. My lunch partner had a huge Cajun omelet, hand cut French fries (I had to have a few), biscuits & gravy and a side of gumbo. Yes, really :) . The owner Jim came by to visit with us and our server was excellent.

Hours are M-F 6:30am til 2:00pm with the $6.89 all you can eat lunch buffet from 11:00am til 2:00pm. Saturday hours are 7:00am til noon. Closed on Sunday to be with their families.

Debra was so excited about our visit to Chicory and Chives that she wrote this up and sent it over right after lunch. I was so excited about having lunch at Chicory and Chives that I had to bust out my video camera. All I can say is the food was Bomb-Dizzle, and you have to try it for yourself…personally I will be back to try more than 1/2 the menu. In the video below you will see Debra’s meal and my monstrous Cajun Omelet which includes a celebration of sausage, ham, bacon, tomato, jalapeno and green bell peppers topped with cheese. I hope you enjoy the videos below. Let us know when you visit and what you think.

Cajun Cooking

Cajun Cooking
Chef Coco learned Cajun cooking from the best cook in Baton Rouge…her mother. Now she passes these lessons on in a simple easy-to-read style for the beginning as well as the more adventurous cook. Her lesson on how to make the perfect no-fat roux makes the book worthwhile all by itself. The book is divided into several sections, from simple everyday meals to more elaborate menus for entertaining. Among the recipes are family stories of a time when life on the bayou was sweet and simple. The book includes grocery lists and a metric conversion chart.

I’m going to New Orleans in May. Where’s the best place for cajun food that’s not too expensive or touristy?

I want to eat somewhere the locals eat.

Well, it’s almost like you’re asking for two different things. If you want true cajun cuisine, New Orleans isn’t your best bet for that. For real cajun cuisine, your best bet would be to look in a city like Lafayette.

Now, if you want some great Creole cuisine, there are tons of places to be found. One of my favorite restaurants that kind of combines Creole cooking with all things New Orleans is Jacque Imo’s on Oak St., but it’s a little pricy.

Mandina’s (on Canal) and Liuzza’s (on Bienville) are great New Orleans hangouts, are more reasonably priced, and serve some great New Orleans dishes.

I don’t know if you’re interested, but here’s a link to a neat article on Creole vs. Cajun I found:

http://www.tabasco.com/taste_tent/menu_planning/cajun_vs_creole_cooking.cfm

Oh, and finally, for whatever your tastes, here is a link I sent to someone the other day. I find it to be the definitive guide on New Orleans dining right now:

http://blog.nola.com/brettanderson/2007/10/the_timespicayunes_fall_dining.html#more

Oh, and if you like oysters, and they got a place downtown now, you need to get some charbroiled oysters at Drago’s. They’re a little pricey, but it’s practically a New Orleans tradition–although, ironically, they were just in Metairie for forever.

Is the act of cooking blackened food or Cajun style carcinogenic or dangerous to breath in the fumes?

Breathing the fumes while cooking blackened fish makes us all choke and cough, I heard this causes cancer. Is this true.

HI, I work in a restuarant for 6 years that has blackened food on the menu, I don’t think that it will cause you cancer, its just the burning of the mixture of spices caynne pepper, paprika ect that are very irritataing to the nose, throat and lungs. I smoke and even I find the act of blackening food makes me cough and makes my eyes burn but I don’t think it will ever cause you cancer. Hope this helps

Restaurants in Meadowvale, Mississauga

Although Meadowvale is a township in its own right, it was incorporated into the city of Mississauga in the late 1960s. Since then, it has grown steadily along with the rest of the bigger city, and in 2006 the population was projected to be almost 100,000. With this large population and because of its proximity to one of the largest cities in Canada, Meadowvale offers some great opportunities for those who enjoy eating out occasionally or often. In fact, the opportunities for great dining in Meadowvale are very diverse, in part due to its large multicultural community (almost 30% in according to the 2001 census, are non-white, including a very large South Asian population).

Meadowvale’s association with Mississauga has paid off as far as its hospitality industry is concerned. The area is home to several dozen high end hotels, each of which offers its own unique dining room. Among the most popular is the Regatta Bar & Grille at the Delta Meadowvale. The restaurant features several theme buffets during weekdays, including southern cuisine, all priced reasonably at $12. The restaurant is also a recent (and frequent) winner of the Wine Spectator Restaurant Award of Excellence.

Nearby, there are several options for the adventurous diner. The Bombay Bhel, for example, is highly rated among both newcomers to Indian fare and long time fans. In fact, the food at the restaurant is consistently given perfect tens by diners, with the service frequently rating at the high levels, from eight to ten.

If you like the idea of the reliability of a chain restaurant but don’t want to eat somewhere too big, you might want to check out the Cajun dining experience at Big Daddy’s Crab Shack and Oyster Bar. The variations on the menu are incredible; everything from different kinds of seafood to catfish and even blackened gator. The restaurant is located on Southdown Road in Meadowvale.

These are just a few of the many options that the Meadowvale area has to offer when it comes to dining experiences. The choices run the gamut from fast food to fine dining, with several cultural restaurants thrown into the mix for the exotic taste.
