Cajun Recipes for my anniversary?

I’d like to cook something special for my anniversary dinner. Each year I pick recipes from the world and I thought this year we could have a cajun menu. The one who gives me something like “family recipes” (I mean a recipe that is not taken from the internet) gets 10 pts.

Traditional Cajun recipes would include Turduckins (duck breast stuffed in a chicken stuffed in a turkey) & stuffed chickens. (Both are traditional French recipes long forgotten but rediscovered here in creole & cajun country)

With either, you would first de-bone the bird or ask your local butcher to do it for you(except for the wings), season the interior, then stuff with your choice of dressing. I like to stuff my birds with crayfish etoufee, Jambalaya(my favorite), dirty rice, Boudin, or something more “american” say Broccoli & Cheese rice casserole. Then I like to cook my bird in a clay pot.(I know that you can get your hands on a clay pot for sure in Italy!) Take root vegetables (potatoes, onions, shallots, carrots’ parsnips) & some mushrooms & place them on the bottom of the clay pot. Add a good full bodied red wine like Cabernet, merlot, sangiovese, granache or pinot noir (not chianti!) to the bottom to give a good flavor & add moisture. Place chicken on top of vegetables. Add fresh rosemary, garlic, sage & thyme then season appropriately with sea salt & fresh ground pepper. Cook at 375 for about 1 hour (get a meat thermometer)

DON’T FORGET TO SEASON THE INSIDE OF THE BIRD BEFORE STUFFING!!!!

Remove the bird onto a large cutting board & let cool for 10 minutes. Then with an extremely sharp knife slice the bird from side to side. This should create “Roulades” which should look like a meat circle filled with the stuffing. Season to taste & enjoy a true masterpiece!

For dessert make a white chocolate bread pudding complemented with a whiskey sauce.(recipe on the internet for bread pudding. Just add white chocolate!)

okayy so im kindof on a diet and trying to eat anything under 300 calories but my family is going to a …?

Just because it’s a TURKEY burger doesn’t mean it’s light on calories…it probablky has 700-800 calories. You should get a sandwich without bacon and even that won’t be that little calories. The only thing you listed that will be 300 calories is the shrimp coctail.

Red Lobster Menu Question?

Does anyone know if Red Lobster still serves their Cajun chicken pasta? My ex and I use to go there all the time and I am not big on seafood so this was my favorite thing to order but its been almost four years since I have been to one.

OH MAN IVE BEEN WANTING RED LOBSTER SOOOOOOOOOOOOOOOOOOO BAD FOR SO LONG I WANT CLAM STRIPS AND MOZZARELLA STRIPS AND CRAB MMMMMMM RAINBOW TROUT AND LOBSTER MMMMMMMMM

I FEEL BAD FOR THE LOBSTERS IN THE TANKS THO SO I JUST LET THEM PICK IT OUT THEMSELV

THAT WAY I DONT HAV TO SEE THEM BECAUSE THER WAS THIS ANIMAL ON THE ROAD TODAY

Trying to remember a French Quarter restaurant in New Orleans?

I remember walking back through Jackson Square to our hotel on Canal Street, so I’m thinking it is on Chartres, possibly in the area of Madison Avenue, Dumaine Street or St. Phillip. If I remember correctly, it was on the corner. And I recall having a soft shelled stuffed crab for dinner. The menu was diverse – like steaks, seafood, chicken – so I don’t think it was a cajun / creole or regional cuisine so much. We’re trying to remember and none of us have yet to come up with the name. I tried looking at area maps, but I haven’t found one that lists all of the restaurants in the area. The other thing that I remember is it almost seemed like two different buildings because we came in through one door and were taken through another to get to our table. And the rooms were really long and narrow. I’m thinking it had dark wood and high ceilings. I know my description probably doesn’t help, but I wanted to provide as much info as possible. Thanks for your help!

Possibly not much help, but Smollensky’s in Canary Wharf do a Cajun jambalaya. Check out their menu:

what are some wedding menu ideas for a buffet and action stations?

Me and my fiance love all types of food especially, seafood,spanish, afro latin cuisine, french creole, italian and traditional mexican and of course good old southern cooking !! please give me some suggestions on a menu for our 200+ wedding guest any ideas for action stations , and buffet items. thanks !

Depends on what you want to spend, but people usually expect a beef carving station, and maybe ham or turkey.
I think it’s boring but people do like it.
A pasta bar can have 3 types of pasta and chefs can add sauces or pasta can be premade and guests help themselves. The fewer the chefs the lower the cost of course.
After that a sushi station ( you’ll need 3 chef’s just for that for 200 guests) is popular, or a Yakitori grill,as well as a Taco bar. Try Beef Chix and Fish or Shrimp Tacos. Try a raw seafood station with piles of cooked Kiwi mussels (Greengage) , Oysters (preopened) and Shrimp.
It it’s outside just a big grill with BBQ might be enough if there is variety like sausage, beef, chix , ribs etc.
Or a traditional NE clambake. You need a caterer who knows how to do this but you get seafood, chicken, hot dogs, chowder, and corn. It’s different fun and everyone gets to wear a bib.


New Orleans non-cajun restaurants?

I am not a fan of cajun food (too spicy, don’t eat seafood), but will be in New Orleans for a wedding in June. I’m looking for suggestions for restaurants of other cuisines (Italian, American, Mexican, Chinese, etc.)

I’m from New Orleans and I can tell you, Cajun resturaunts are not the dominant resturaunt market. I grew up in Lakeview close to Metairie and the resturaunts there are quite diverse.
So this will be mostly Metairie Locations which I know is more up and running then New Orleans.

For steaks try Crazy Jonnies in Fat City which is Metairie.

For italian try anything that’s not a franchise, someone above mentioned Italian Pie, they have good pizzas. But there are others that do much more. Faustos in Metarie is another good one.

Zea’s Rotessiore is great for something different, I used to work there so they made me try everything on the menu. Everything is delicious and if I remeber right there’s one location that makes it’s own beer in Clearview Mall.

My favorite chineese resturaunt was Golden Dragon in Metairie. It’s family owned and run, and the food is great. Plus they make a good Mai Tai.

Ok and po-boys, you gotta have one before you leave. Go to Parrans (I know im not spelling it right its pronounced pierans) which is in Metairie. (I suggest roast beef..yumm) My mom suggests Jam’s which is also in Metairie, there you will get a tastse of New Orleans hospitality.

At least once finish a meal off with dessert at a coffee house I suggest Cafe Cafe in Metairie or La Madelines. And try Morning call one morning for coffee and benietes.

Ok now for the french quarter:
Breakfast: Cafe du monde
Lunch: Central Grocery Store for mufellatas or Masparos
Now I must warn you about the Quarter at night. It’s not very safe, especially if you walk close to the allies. Stay away from the allies! Travel in a group at night and don’t get too tispy. I hope you have a great trip and be safe.
