I have a small collection of random cajun / creole cookbooks, but I am curious if there is one that sums up the food and culture to a T. Everything from the standard fare to the most unusual….
Been cooking cajun/ creole food since I visited back in 96, but the recipes are getting old…

what is cajun food like and is it good? and what things are it made from?


Cajun is awesome!!! Some people think its just hot, but that’s not true. There are some hot dishes, but mostly it is a blend of different spices.
The three basic ingredients of Cajun food are onions, green pepper and garlic. (called the holy trinity of cajun food). Most dishes start with these – you cook them till very soft and then you add everything else.
Another basic thing is called a "roux" which is flour and oil cooked together it can be a light roux or a dark roux and it is a little tricky to master. It is the beginning of lots and lots of cajun dishes like gumbos and stews.

If you want to try cooking some cajun dishes, please go to an authentic site – MUST be from Louisiana. Best cajun food in Louisiana is located in the Lafayette area (west of baton rouge) Not New Orleans – that would be Creole Food.


What should I eat for supper tonight?

I’m in Lafayette, LA, a real hot bed for some of the best food in the world, including cajun food and seafood, and I just don’t know what I should eat. My wife and I were planning to go and eat out,but our son, a student at LSU, called and asked her to design, create, and complete by tomorrow, his intermerial basketball teams jerseys. So now I’m going to pick up food somewhere, while she works on their jerseys, and I don’t know where. Any suggestions are appreciated.

The crawfish are in early season, so does someone have a stand close to your home. That would be quick and easy. I’m from Louisiana also and we had pulled pork sandwiches for supper. They were homemade but some bought ones would be good too.
