It’s the food I grew up with- grits, fried green tomatos, sweet tea, biscuits and gravy, and all that.
Maybe you could share you’re favorite, it doesn’t matter if it’s deep south home cooking or cajun/creole.
I’m going to make a huge meal of southern food and want a lot of variety.

SOUTHERN BEEF & BEANS CASSEROLE
1 lb ground beef
1 28 oz can Bush’s Baked Beans
1/2 cup chopped green peppers
1/2 cup chopped onion
1 6 oz tomato paste
1 8 1/2 oz package Jiffy Corn Muffin Mix
1/2 cup package shredded Cheddar cheese
1. In a skillet, sauté ground beef, onion and green peppers until meat is browned. Drain excess grease.
2. Combine meat mixture, Bush’s Baked Beans and tomato paste. Spoon into a lightly greased 8 inch square baking dish.
3. Prepare muffin mix according to package directions. Spead evenly over bean mixture.
4. Bake at 350°F for 30 minutes, sprinkle with cheese and continue baking 5 minutes more, or until cheese melts.
SOUTHERN CORN CHOWDER
1/4 lb lean salt pork or pancetta
1 onion, chopped
1 clove garlic, minced
2 tablespoons chopped green bell pepper
2 potatoes, cubed
3/4 cup diced celery, strings removed
1 1/2 cups boiling water or stock
1 cup undiluted evaporated milk
1 medium can whole kernel corn (or 1 1/2 cups frozen)
1/2 teaspoon salt (or 1 chicken bouillon cube)
1 tablespoon butter (room temperature)
2 teaspoons flour
Cut salt pork or pancetta into 1/4 inch dice and brown in bottom of a saucepan. Add onion, garlic and pepper; sauté 5 minutes.
Add potatoes, celery and boiling water or stock. Add salt or bouillon cube. Cover and simmer over low heat until potatoes are tender. Add corn and evaporated milk (Fresh milk or Cream may be substituted for evaporated milk). Blend together butter and flour evenly and gradually add to chowder.
Cook, uncovered over low heat for 20 minutes, stirring occasionally until soup is thickened. Be careful not to scorch bottom (it’s best to use a heavy bottomed pan and watch heat carefully).
Season to taste with salt and pepper and serve with milk crackers.
Note: Creamed corn may be substituted.
Variations:
Add 1 package frozen chopped broccoli for cream of broccoli soup.
Add 1 can chopped clams or 1 cup chopped fresh clams for a quick New England clam chowder.

Yeah my dad use to make sheppards pie all the time- pizza crust on the bottom then layers of hamburger meat,mash taters,cheese,corn,and gravy! SOO good! I prolly should try it with other veggies as well

Seafood pasta with white sauce – what to flavor the sauce with?
I am planning to make a scallop pasta with a low-fat white sauce and some sauteed green and red bell peppers mixed in. White sauce by itself doesn’t have much flavor and none of the ingredients in the dish are strongly flavored. So what can I use to season the white sauce with to give it a little more flavor. I am trying to keep the calories low so that lets Parmesan or other cheeses out, but I am more than happy to use spices or herbs. I was thinking of adding Old Bay to the sauce or some Cajun seasoning – what do you think?
2 tablespoons olive oil
1/2 cup chopped fresh parsley (preferably Italian)
8 garlic cloves, chopped
4 6 1/2-ounce cans chopped clams, drained, juices reserved
1/2 cup whipping cream
1/4 cup dry white wine
1 tablespoon white wine Worcestershire sauce
1/2 teaspoon garlic salt
1/4 teaspoon ground white pepper
1/4 teaspoon cayenne pepper
Heat olive oil in large Dutch oven over medium-high heat. Add chopped parsley and chopped garlic and sauté until garlic just begins to color, about 45 seconds. Add reserved clam juices, whipping cream, dry white wine, Worcestershire sauce, garlic salt, white pepper and cayenne pepper. Simmer until mixture is reduced to thin sauce consistency, about 10 minutes. Add chopped clams and freshly cooked linguine to pot and toss until sauce coats pasta thickly, about 5 minutes. Season to taste with salt and pepper.

I’m looking for an easy but good cajun/spicy chicken breast recipe, perferably oven fried or pan fried, anyone know of one?

DIRECTIONS
1) Cut up chicken into small cubes and cook them in a pan.
2)While the chicken is cooking, mix the ranch sauce with chili powder, adding powder until you think it is spicy enough.
3) When chicken is done, drain it, and put it into a large bowl, mix in the Chili-ranch sauce..
4) Spoon a portion over Tortilla and add lettuce, tomato, or cheese as desired.

don’t just go by the name! Look at the ratings of the recipes too (that’s if you are gonna use the actual recipe in that site) and if you are gonna use the actual recipe, then go with Cajun Seafood Pasta. It has a good rating.
And just in case, this is a VERY delicious recipe;
Fettuccini Carbonara
5 teaspoons olive oil
4 shallots, diced
1 large onion, cut into thin strips
1 pound bacon, cut into strips
1 clove garlic, chopped
1 (16 ounce) package fettuccini pasta
3 egg yolks
1 cup heavy cream
3/4 cup shredded Parmesan cheese
salt and pepper to taste
Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.
Serves 6.

Red Lobster – non seafood items?
I am going to Red Lobster tonight for dinner. It is my husban’s favorite. I do not eat seafood. I have eaten the steak there which was pretty good. Has anyone ever tried the Cajun Chicken Linguine Alfredo? Or the new Peach Bourbon BBQ chicken? I am thinking of ordering one of these. The cajun chicken pasta looks really good, but I wonder how cheesy it is. I don’t mind a bit of cheese, but I normally stay away from alfredos as they are too cheesy for my liking. Thanks for your time!
I’m not sure how cheesy they are but I think they have a Chicken Caesar or steak salad you could try.

Do you have a really good recipe for cooking salmon?
I usually do the same mix of ingredients: margarine, cajun seasoning (Tony Cacherie’s), fresh lemon juice or bottled lemon juice, dried parsley flakes, garlic power and a few drops of green Tabasco. I melt all that in the microwave and pour the mixture on top of the fish. It gives the fish a tangy, spicy and seasoned flavor. It’s probably not the healthiest recipe though, so I am looking for different ideas.
I cook my salmon two different ways. With one, I put a layer of mayonnaise seasoned with black pepper, dill and onion powder over the top of the salmon, wrap it in foil and bake it until just done. The salmon is very moist that way. I’ve had it in a restaurant fixed that way but I believe they mixed mayonnaise and either sour cream or cream cheese. By the texture, I want to say cream cheese.
And, when we went to Juneau, Alaska, a restaurant that cooked their salmon over alder use a 3-2-1 method. 3 parts brown sugar, 2 parts lemon juice and 1 part butter. Melt the butter, mix everything together and coat the fish. I again seal it in foil and bake it.
Some ladies in my group like the 3-2-1 method and others like the mayonnaise version. The restaurant that uses the mayonnaise method is Anthony’s Home Port in Olympia, WA
