Cooking recipe help. How much salt and cayenne to add???

Here is the ingredients called for the recipe

* 1 cup milk
* 1/2 cup Creole mustard
* 1 teaspoon hot sauce
* Salt and cayenne
* 4 catfish fillets, (about 6 ounces each)
* 3/4 cup flour
* 1/2 cup yellow cornmeal
* 4 teaspoons Essence, recipe follows
* Vegetable oil, for frying

Notice for salt and cayenne it doesnt list how much to put in.

In a mixing bowl, whisk the milk, mustard and Tabasco together. Season the mixture with salt and cayenne.

Here it also doesnt say how much to put in… just that your supposed to do it. Adding too much salt and cayenne might be too strong or likewise not strong enough if I dont add enough. So how the heck am i supposed to know how much to add? Any assistance will be appreciated thanks!

I’d go with 1/2 tsp. salt but no cayenne since it already has some heat from the Creole mustard and hot sauce. But if you like things spicier, then you can add a little cayenne – maybe 1/4 tsp.


Any good restaurants in Hot Springs, AR?

Mom, sis, and I will be going to Hot Springs tomorrow for a day of fun. Does anyone know of any good cajun or seafood restaurants in the area?

I was there a few years back and naturally had to make a stop at McClard’s but that is BBQ. The place I liked best was Doe’s and they do have seafood. Sit out on the back patio / dock, pull up in your boat. Toss your leftovers and crackers to the huge hungry catfish that beg like dogs as they pop up from the water. I’m from So Cal so this was unique for me, the food was good too.

Cat fish Fillet (.81LB)..how do I cook it…my first time cooking this…?

I would like to know what seasoning would go well with this, i heard Creole was good and if so how long would i leave it on the fist..and then when i put it in the pan..how long??

Catfish is very versatile. You can bread it and fry it. You can season and bake in foil. You can grill it.

Easy for first timers. Heat skillet with a small amount of olive oil, season Fillet with dry Italian dressing mix (like a package of good seasons). Place in skillet cook on medium high until opaque then flip and cook on other side. Its hard to over cook Catfish.
