Explain to me what is meant by Creole cooking?
And is it the same as Cajun cooking?
I am a former chef and have done a bit of both Creole and Cajun cooking the Creole food or way of cooking is the more high end and involves the influences like the African, French, Greek and Natives that were in and around New Orleans, Cajun is more the rustic rural back country food, adapted from th french settlers fro Canada the Acadians back when they were force into exile by the British from Nova Scotia, both relied on the bounty around the area, the lakes and rivers and Gulf of Mexico.
Most of the restaurants in New Orleans will serve both and have mingle d the 2 , but there is a basic difference, small but there.
