What is the relation between Cajun foods and African Americans?

There was a time I asked my friend what type of food most African-Americans enjoyed to eat and he told Cajun foods. Not surprisingly, I hear this answer from the majority of people whom I ask. Why is this so?

speaking as a real cajun, i can first tell you that African Americans don’t necessarily enjoy the "cajun" cuisine you’re referering to. There is a big difference between cajun food and creole food. They enjoy more a mixture of the two. The cajuns that migrated from Nova Scotia had to learn to cook from the land. They used every part of the animal they killed and used every spice they could get their hands on from the land to season the food. thus, the "cajun" cuisine you eat now. Slaves did not necessarily eat the cajun cuisine. They still cooked their own meals. Some slaves were Creole. Creoles were a mixture of black and spanish people. They too had their own style of cooking and their own spices. The two cultures were eventually merged into our melting pot here in Louisiana and that’s the "cajun" they eat. Is there such a thing as Surf and Turf Jambalaya?

You know, steak and seafood with a Cajun style twist?

Any expert chefs out there who can give me a recipe?

I am not an expert chef, but I am a big fan of Jambalaya and watched many an expert chef on Food Network.

The whole point of Jambalaya is a catch-all of various meats and rice and veggies. Its sort of whatever is left over. Most common meats are sausage (like andouille), chicken and shrimp or crawfish. I don’t see why you couldn’t use beef too if you wanted. Zatarain’s makes an excellent box mix – just add the meat of your choice. If you wanted to use beef, sausage or chicken, I recommend partially searing it before adding it to the mix – you’ll get a nice color and flavor that way. The box has directions for when to add the shrimp (or crawfish).

While this is not Jambalaya, you could certainly use cajun seasoning on steak and shrimp kabobs on the grill and that would be quite delicious. Just be sure to keep the meats separate since their cooking times are radically different!

If Creole cooking is your passion, internet speeds are important. When I’m looking up information I don’t want to be stuck on the same page forever. Are there crawfish in Thailand? Would Thai people like cajun food?

I wanna open a cajun restaurant in Thailand

Hi, I am Thai but lived abroad for a big part of my life so I think I have the views of both foreigners and Thais and hopefully I can help shed some light on this issue. For the first question, yes there are crawfish in Thailand, although they are much more expensive than regular seafood (shrimp, fish, squid, etc). Cajun food is still pretty new in Thailand, I know of a few in Bangkok (capital city) and they are pretty good although I must say 90% of the customers are expatriates who live in Bangkok. So It really hasn’t hit the main stream yet. Personally, I think it will be quite difficult to break into the ‘mass’ Thai market. In my humble opinion, your best bet would be to open it in a more touristy or areas where there are more expatriates, particularly white caucasians. I think your main destinations could be (list is not exhaustive): Bangkok, Koh Samui, Phuket. GOOD LUCK!
