recipe’s please?

i would like any recipe’s for authentic creole cooking and authentic american meat loaf .
and some sauces ,eg barbeque,piri,creole.

I don’t know if this is authentic, but it’s the meatloaf recipe I use, and the family loves it.

1.5 lb. ground chuck
1 packet dry onion soup mix
3/4 c. shredded cheddar cheese
1 egg
1/2 c. crushed Ritz crackers
1/4 c. ketchup
1/4 c. A-1 steak sauce

Mix all well. Put in loaf pan and bake in preheated 350 degree oven for about an hour.


Can anyone tell me how to make the best cajun seafood?

I like to have medium frozen prawns, muscles, clams, crabs, full shrimps, and crawfish. I like to add the usual….sweet raw corns, spicy sausage, varieties of potatoes, and a lot of garlics.

In your crawfish boil add zattarans dry crab boil mix…also try adding button mushrooms, whole artichoke(add these fisrt so they will cook alot), cut two lemons and whole garlic heads, celery and onion in half and add just like that. add the sausage, corn potatoes than seafood.the garlic and onion mushrooms and artichoke add flavor and are awesome to eat! For the dipping sauce add, mayo, katsup, whistershire, lemon, horseradish. P.S. the aretichoke peel in between your teeth. The heart is the BEST part when you get to it! Aaaaayyeeee!


anybody know authentic cajun/creole recipes they would like to share?

a long time ago they had a cajun seasoned cooking oil……?

Does anyone know who mad it?
I thought about that but I didn’t know if it would work.
I think it was about 15 or so years ago. it was either crisco or lou ann. They were small bottles of it.

If you are deep frying something, any liquid spice would boil off, any solid would scorch in the initial heating. It is easy to make a seasoned oil for grilling or quick pan frys. Put what ever peppers, garlic, onion, herbs in vinegar for a week then whisk the vinegar with the oil.

I have lived in La for 43 years and never seen such a oil commercially.

Cajun is awesome!!! Some people think its just hot, but that’s not true. There are some hot dishes, but mostly it is a blend of different spices.
The three basic ingredients of Cajun food are onions, green pepper and garlic. (called the holy trinity of cajun food). Most dishes start with these – you cook them till very soft and then you add everything else.
Another basic thing is called a "roux" which is flour and oil cooked together it can be a light roux or a dark roux and it is a little tricky to master. It is the beginning of lots and lots of cajun dishes like gumbos and stews.

If you want to try cooking some cajun dishes, please go to an authentic site – MUST be from Louisiana. Best cajun food in Louisiana is located in the Lafayette area (west of baton rouge) Not New Orleans – that would be Creole Food.


It is hard to cook when you can not see.
