How common is Vegeterianism among the ”Creole” societies of the Indian Ocean?
Are vegetarian dishes offered only in addition to most recipes of the region, or is there any evidence to suggest that the diet is popular or even dominant in any sections of the community? Or, given the dependence on many of the islands upon fishing, are there many people who eat fsh but no other meat? Is it possible to avoid meat in the cooking of this region easilly?
Being a former chef and having worked in both Southeast Asia and in the Carribean, creole is more attributed to the islands in the Gulf of Mexico and stemming from the Africa influence during the slave trade, it came from the east coast of Africa, Ghana, Congo and along that coastal area.
It rose out of the use of the native ingredients they brought from Africa and th available produce in the isalnds of the Carribean. The East Indian area has little to do with Creole food or cuisine except the Okra plant did come from India.
Is there a seafood restaurant like Boiling Crab, Crabulous, Captain Crab near the San Fernando Valley area?
At these cajun creole seafood restaurants, you order seafood by the pound and it comes with shell-on covered in spices.
I’ve eaten at these places in the San Gabriel Valley area before, but would like to know if there is a restaurant like these that are closer to home.

SPICE-CRUSTED PORK TENDERLOIN WITH KIELBASA SAUSAGE GRAVY
3 tablespoons butter
3 tablespoons all purpose flour
1/2 cup minced red bell pepper
1/4 cup minced onion
1 1/2 cups canned low-salt chicken broth
1/2 cup 1/4-inch cubes kielbasa sausage* (about 2 ounces)
1/4 teaspoon cayenne pepper
2 tablespoons ground cumin
2 tablespoons ground coriander
1 teaspoon salt
1/2 teaspoon ground black pepper
24 ounces pork tenderloin, cut into 4 pieces
3 tablespoons olive oil
2 tablespoons minced fresh parsley
Preheat oven to 400°F. Melt butter in heavy small saucepan over medium-low heat. Add flour; cook until mixture is dark golden brown, stirring frequently, about 20 minutes. Add bell pepper and onion; sauté 3 minutes. Gradually whisk in broth. Add sausage and cayenne; increase heat and simmer 5 minutes, stirring often. Season with salt and pepper.
Mix cumin, coriander, salt, and pepper in medium bowl. Dredge pork in spices. Heat oil in heavy large ovenproof skillet over medium-high heat. Add pork and brown on all sides, about 8 minutes. Transfer skillet to oven; roast pork until thermometer registers 160°F, about 10 minutes. Transfer to cutting board. Let stand 5 minutes. Slice pork 1/2 inch thick. Divide among 4 plates. Rewarm gravy. Mix in parsley. Pour gravy over pork and serve.
The left over meat is so good on a salad…yummy!
Cajun cooking, can you please help me.?
I’m making Gumbo it call for lemon juice I put a little to much in it how can I fix that?
The recipe also has brown sugar , can I add a little more brown sugar to balance it out or is there something else I can do to fix that?

Maybe just add more meat and okra, too little or too much lemon shouldn’t be a problem…

Some people call me creole….. Am I ?
I am black, indian,and european. My grandmoter was half black half indian. On my dad’s side my great grandmother was black,indian and european. My mom’s mother was from Alexandria Louisiana. Some of my family claim to be creole but the side I am close to never say it. I am very light skined, and the family that claims to be creole are dark skinned. I grew up on creole cooking because that’s what my granny cooked. But hell that’s how we Texens eat anyway. I just call myself mixed. Most blacks are mixed with somthing but they try to deny it.
do you speak creole french?..well even if you dont you may be considered creole anyway, they are a very mixed bunch and its more of a cultural idenity rather than a racial one. you can be born east asian to a creole family but you are still creole. thats what is great about people from that area, alot of my peeps are from there too but cajun not creole. its a big extended family
